Aims and scope
African Journal of Food Science Research is a peer-reviewed, open access journal that publishes scholarly articles in the field of food science and technology, food safety and microbiology, nutrition sciences, biochemistry and agricultural sciences. The journal concentrates mainly on novel, high quality and high impact review papers, original research papers and short communications, in the various disciplines encompassing the science and technology of food and its allied disciplines. The journal is particularly interested in articles that expand our understanding of the biological/microbiological, chemical, physical, sensory, nutritional, and engineering properties of foods and beverages. Also papers that transfer research-based information and technology to consumers, food and beverage companies, and government agencies with the goal of enhancing the availability, quality, and safety of our food supply are encouraged. Finally, AJFSR welcomes manuscripts from dairy science, chemistry, biochemistry, nutrition, chemical engineering, industrial engineering, microbiology, confectionery sciences, food technology, food processing, food fermentation, food engineering, food safety, food nutrition etc.
